With so many rich, bold flavors, it’s hard to believe this Thai-inspired meal is vegan! We start by sautéing shallots, ginger, and garlic, and then add aromatic spices including turmeric, coriander, and cumin. Next, we pile on roasted sweet potatoes, green beans, bell peppers, and chickpeas, and serve it all with creamy coconut lime brown rice.
